Healthy Protein Pancakes

I've lived in the United States for more than 13 years now, but I'm still so german at heart that I stick to my signature musli with fruit & buttermilk bowl in the morning. Pancakes for breakfast is an american favorite that I never really got into (just like peanut butter and jelly..thats right- I just can't). Don't get me wrong, I love pancakes! Just not the super buttery, full of sugar heavy kind. I prefer to start my day with something healthy and protein rich. Something that gives me energy for my workout and hold me over until lunch.

Today I'd like to share the perfect breakfast recipe that will make all my american friends as well as all my health conscious peeps happy. Healthy High-Protein Pancakes. Ok, ok...I must admit that they don't look as pretty as the regular ones. And you may have to play with the ingredients to get the right consistency. But these pancakes are tasty, full of nutrients and very easy to prepare. Perfect for every day or a cozy sunday breakfast.

Ps: Did you know that apple sauce makes a great substitute for butter? I use it all the time for baking and it works well.

Makes 3 – 5 pancakes

Ingredients:
3/4 cup/85g brown rice flour
1/4 cup/30g coconut flour
1-2 scoops of protein powder (any plant protein is fine. I use hemp protein)
1 tsp baking powder
3 small ripe bananas
2 eggs
1/2 cup/150 ml almond milk
2 Tablespoons apple sauce

1-2 tsp oil or coconut oil to cook

Instructions:
1. Combine the flours, protein powder and baking powder in a bowl. 
2. In a separate mixing bowl mash the bananas. Add milk, eggs and apple sauce and mix well. 
3. Add your dry ingredients to the wet ingredients and mix well until it has a thick consistency.
5. Heat the oil in a non-stick pan and roast the pancakes golden brown on both sides.

Add your Favourite Toppings:
Sliced almonds, fruit, yogurt, chia seeds, honey or whatever your heart desires
